Yummy and Healthy Turkey Chili with Lime

Chili when made with good ingredients is a healthy dish and not too heavy when you use ground turkey. It’s easy to make whether you cook it on the stove or in a slow cooker and is a good source of protein. You can add more calories to it by adding more toppings but if you eat it by itself with maybe some whole grain or fresh baked bread it’s fairly low calorie.

I found that adding a little lime makes it extra special. I used Trader Joe’s Chili Lime Seasoning Blend which combines chili pepper, red bell pepper, and lime juice powder. If that isn’t available in your area, just replace it with mild chili powder and squeeze in a lime instead.

Turkey Chili with Lime

Healthy, yummy with just a little tang, this chili is delicious!

Equipment

  • 1 large dutch oven
  • 1 slow cooker optional

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 lb ground turkey
  • 2 tbsp Trader Joe's Chili Lime Seasoning Blend Alt: 2 Tbsp mild chili powder and a squeezed lime.
  • 2 tsp ground cumin
  • 1 tsp Italian seasoning Alt: Dry oregano, basil, thyme
  • 1/4 tsp cayenne pepper
  • 1 28 oz can diced tomatoes
  • 2 cups chicken broth
  • 2 15 oz cans Great Northern, kidney, pinto, or black beans. drained
  • 1 15 oz can sweet corn drained and rinsed

Instructions
 

  • Heat the oil in a Dutch Oven over medium heat. Saute the chopped onion, garlic, red pepper until onions are translucent.
  • Add in the ground turkey and cook it until it is no longer pink.
  • Add the chili lime blend (or chili powder and squeezed lime), cumin, Italian seasoning, cayenne pepper and salt. Stir until blended.
  • Take 1 cup of the beans and smash them a little. This makes the broth thicker.
  • Add the tomatoes, chicken broth, all the beans, and corn. Bring the chili to a boil and them simmer for 45 minutes to an hour.
  • Add salt and other seasonings to taste.
  • You can garnish the chili with shredded cheese, avocado, sour cream, nachos, Tabasco, or anything you like in chili. Or, serve it simply with toasted bread.

Notes

To use a slow cooker reduce the chicken broth to 1/2 cup. Brown the turkey and onions first before adding them to the slow cooker. Add the rest of the ingredients and cook high for 3-4 hours or low for 6-7 hours.

Turkey Chili with Olive bread

Turkey is a lean form of protein that is easy to digest. The beans contain fiber which is especially important as you age. If you eat a bowl as a meal by itself it only contains about 350 calories. It is filling enough to keep you satisfied as well as contain healthy nutrients.

If you want to lose or maintain your weight it is a perfect small meal that is fully balanced.

It will keep for about 1 week in your refrigerator or freeze it up to 3 months in individual servings. Just thaw it out overnight and reheat it on the stove or microwave. If you are single or a couple this is a wonderful and nutritious frozen meal to have on hand.
