I love cold soups, especially on a hot day, and this recipe for Yogurt and Vegetable cold soup is refreshing as well as nutritious. It’s a version of Tarator soup that is popular in the Balkans and is similar to Tzatsiki. Use your favorite brand of plain yogurt made from cow, sheep, or goat milk. I prefer Greek-style yogurt because it’s extra creamy.

Yogurt and Vegetable Cold Soup
Ingredients
- 1 cucumber chopped
- 1 scallion chopped
- 2 cloves garlic crushed
- 1 tsp honey
- 1/2 tsp dry dill weed or 1 tbsp fresh
- 4 cups of tomato juice
- 1 cup plain Greek yogurt
- 1 cup sweet red or green pepper chopped
- several mushrooms thinly sliced
Instructions
- Combine all the above ingredients and chill for several hours.
- Serve in chilled bowls with a tiny bit of dill sprinkled on top of each bowl.
Balkan Tarator soup
Balkin-style Tarator soup is generally made with Bulgarian yogurt, cucumbers, garlic, chopped dill, sunflower oil, walnuts, and a bit of water or ice. The version above has added tomato juice, peppers, scallions, and mushrooms to give it a twist in flavor.
