There are many ways to brew a cup of Joe like French Press, pour-over, drip, and expresso, which I was already familiar with. However, I had never heard of siphon brewing until I was invited to a special press event in Los Angeles, along with other writers, to watch a demo of the Siphonysta coffeemaker.
We were treated to a lovely morning of coffee tasting and met with representatives of the company including the CEO of Tiger America Corp. The Siphonysta was designed in Japan and is an elegant-looking machine that would look splendid in any modern kitchen.
Siphon brewing works differently than most coffee makers in that the coffee is siphoned up into a container on the top rather than down into a pot. In effect, it defies gravity.

What is siphon brewing?
A siphon brewing system uses a steam and vacuum process to create a vibrant and more flavorful coffee that cannot be recreated in a drip brewing system. A patent for the technology was filed in the 1830s by Loeff of Berlin. A French woman named Marie Fanny Amelne Massot of Lyons, France – better known as Mme. Vassieux designed a commercially successful coffee maker in 1856 made with two glass balloons held together by a frame. The theory was that boiling coffee destroyed its flavor.
It works by heating the lower chamber which forces vapor pressure to rise to the upper chamber and mix with the coffee grounds. Then the mixture is pulled back into the lower chamber through a filter.
What is special about the Siphonysta?
Tiger America Corp reimagined the concept of siphon coffee brewing using modern technology and design. Most siphon coffeemakers take up to 30 minutes to brew the coffee, but the Siphonysta completes the process in 3 minutes.
The machine makes 2 servings but what is unique is that you can personalize your flavor profile using presets that control the strength to produce the perfect cup of coffee to match your taste. It also does not require a filter and captures the coffee’s natural aromatic oils to make it even more flavorful.
There is a dual temperature function on the Siphonysta that lowers the water temperature mid-brew to bring out the fullness and flavor of the beans and reduces any bitterness.
What I found especially nice is that the coffee is so tasty on its own that you don’t need milk.
The coffee maker is not inexpensive by any means but because the quality is so high and it’s an especially attractive machine, I feel it’s worth the investment.
