1pink Grapefruit peeledpith removed and cut into circles
1/2bag mache lettuce leavesor watercress
Pea Sprouts
1/2lemonsqueezed on top of the avocado to prevent browning
1Tbspwalnut oil
2tspraspberry vinegar
Instructions
In a large dish, layer the bottom with mache leaves
Arrange the fennel, avocado, and grapefruit slices on top of the mache
Garnish with fennel fronds and pea shoots
Mix walnut oil and raspberry vinegar
Drizzle on top of the salad
Notes
I found pea shoots that had a mixture of green and purple shoots. I used the purple shoots as a garnish. Any type of sprouts will do or edible flowers.
