Equipment

  • 1 food processor
  • 1 baking sheet
  • parchment paper
  • measuring cups and spoons
  • 1 Mixing bowl

Ingredients

  • 1 cup rolled oats
  • 1/4 cup nuts such as walnuts and almonds
  • 1 tbsp dark cocoa powder
  • 1 tbsp sesame seeds I sometimes use Hemp seeds
  • 1 tsp vanilla extract
  • 1/2 tbsp honey
  • 1 small banana mashed
  • 1/4 cup water

Instructions

  • Put the oats into a food processor and blend until it is powder-like. 15 seconds usually does the trick.
  • Add the nuts and grind them with the oats.
  • Place the ground oats and nuts into a bowl.
  • Add the cocoa powder, sesame seeds, vanilla extract, and honey into the bowl and mix.
  • Blend in the mashed banana.
  • Add water and mix until blended. Make sure not to add too much.
  • Form the batter into 1-2" balls and place them on a baking sheet lined with parchment paper.
  • Bake at 350 degrees for 30 minutes.
  • When done, cool on a cooling rack.

Notes

Serve the oatmeal balls by themselves or with jam.
Another variation:
Instead of banana and water, I add about 1/4 cup of unsweetened applesauce just enough so you can form the mixture into balls.
